Waco to Hillsboro: A Two-Town Texas Whiskey Weekend

A good whiskey weekend does not need a long list of stops. Give Waco and Hillsboro a day each, and there is room for a distillery visit, a proper meal and a little time to see the towns around them. Balcones and Bearded Wheat offer two different settings for that trip: a downtown Waco destination and a small, independently owned Hillsboro distillery.

Treat this as a flexible weekend rather than a timed tasting circuit. Check both venues before choosing your dates, arrange transportation with a non-drinking driver and leave the drive between towns outside your tasting plans.

Start with Balcones in Waco

The brick Balcones Distilling building with its rooftop sign and red water tower.

Make Balcones your Waco anchor. Its bottle shop and tasting room welcome visitors, while the official visitor page also advertises guided tours that explore production and maturation. Check the live booking calendar before building your day around a tour. A tasting-room visit can be the plan if a suitable tour is not available.

The experience gives you a reason to ask about the decisions behind the whiskey, not just the bottle in front of you. What does grain contribute? What changes during aging? Which part of the process would the team most like visitors to understand? Choose a modest tasting rather than trying to cover the entire range.

If a particular bottle is the reason for your trip, ask about availability beforehand. Tour participation is restricted to guests 21 and older, including a restriction on infants and children, so confirm that the experience fits your group before reserving.

Give Waco the rest of the day

Have lunch before your visit and leave dinner unhurried afterward. An overnight in Waco can make more sense than squeezing a second distillery into the afternoon. Choose lodging and transport together: being nearby does not automatically mean every part of your evening is safely walkable.

Use any extra time for the part of a weekend that is easiest to lose when planning around reservations: a conversation over coffee, a browse around town or simply a break. There is no prize for adding another tasting.

Make Hillsboro your second chapter

The red-brick Bearded Wheat Distillery storefront with a metal awning and wooden entrance doors.

Bearded Wheat Distillery gives the next day a smaller-town focus. Hillsboro's tourism office describes a downtown tasting room with a speakeasy-inspired atmosphere, whiskey and cocktails. The local chamber identifies it as a family-owned business in a restored historic building, with bourbon and an original expression called Solara.

Make the tasting room the anchor, not an assumed production tour. Ask what is being poured and whether any special event is planned for your date. Music and food offerings can change, so do not make an advertised past event the basis of your meal plans.

Leave time to explore downtown and eat before your visit. Confirm the current entrance and address directly when checking hours; published listings are not fully consistent.

Before you go

Use the Balcones visitor page and Hillsboro's Bearded Wheat listing to start planning. Recheck hours, reservations and transportation close to departure. Bring identification, keep water handy and let the schedule stay spacious.
